Breakfast in a Blender

I know you’re probably thinking the same thing my husband thinks on a regular basis: “This woman has lost her damn mind.” Hear me out, though. While I know that blender meals aren’t some brand new, original, groundbreaking idea that I’ve come up with on my own, I’ve recently become obsessed with simplifying my life. I thought I was going to be the mom that made home-cooked, unprocessed meals for my child every day. (Stop laughing. I’ll wait for you to catch your breath...)

We good? Great. Now, listen. That’s what I thought before my little heathen darling was born. I thought I would be this amazing super-mom who cooked fresh meals and limited screen time and read and sang to my baby all day... because, really, how hard could it be? HAHAHA. Okay, now I need to catch my breath.

To get to the point, I’ve been spending a lot of time thinking about ways to simplify and streamline my time in the kitchen. I have quite a few blender meal recipes up my sleeve, but I’ll share this one with you today. These Blueberry Banana Pancake Bites are delicious, quick, easy, and (drumroll, please) HEALTHY. Hello! We have a winner. I mean, what kid doesn’t love pancakes? And these bites are the perfect size and shape for little hands.

If you're looking to make a small batch (half of the recipe), I recommend this little guy. I love using this tiny blender for everything from chopping up small batches of veggies to blending coffee and milk for a latte at home (because Starbucks doesn't deliver). Bigger batches would do better in a normal sized blender (I love this one).

So, here it is. Try these out. The recipe easily divides or multiplies and is extremely customizable. Just use common sense. (I know, that’s asking a lot when you’re a tired mom.) Make a big ass batch one weeknight and have them for the whole week. I wrap a couple at a time in a damp paper towel and nuke them for 15-20 seconds.

Blueberry Banana Pancake Bites

Yield: 1 dozen bites
Prep Time: 5 minutes
Cook Time: 20 minutes


2 bananas
2 eggs
¼ tsp baking powder (optional, to make them fluffy)
½ pint fresh blueberries
½ cup old-fashioned oats
¼ cup Greek yogurt

Preheat your oven to 400°. Get a muffin tin and spray it with nonstick cooking spray.

Take all of your ingredients and toss them in a blender. Blend that shit until it looks like pancake batter. It shouldn’t take more than 30 seconds or so. Divide the batter evenly into your cupcake tins and bake for 20 minutes or so until set.

DONE. Holy crap, wasn’t that easy?

For a quick and easy clean up, rinse the blender out well then add hot water and dish soap. Blend that together for a little while and rinse the suds out. Voila!
